TV chefs nowadays "Today we are going to cook a very simple dish that everyone can cook at home from ingredients at hand" Out of the 10 ingredients 3 are very expensive, 5 are only available in small villages somewhere the middle of Peru or Zimbabwe, 1 I never even heard of and the last one is potato. But the specific type that actually went extinct in 1873 and you should only use the museum's reserves.

That point is that Italy (but also France) have developed throughout their history a culture around food. For most of other countries eating is just "let's put ingredients in a pot, mix them together and cook".

Some cultures get protective over their customs, and like things to be referred to by their correct name. So i dont think anyone cares if younput pancetta, or bacon, or hame in your pasta, it just wouldnt be a "carbonarra". I kinda get both sides.

Yup, can confirm. Worst of all is when you got a GF who's not that good at cooking but insists on original ingredients while you're living in a small town

Pancetta is perfectly ok too. As long as you dont put milk cream in, it's ok

That's not chefs. That's italians. I'll know i'll get downvoted to hell and back for this, but italians have stagnated their cuisine due to traditionalism

Okay i have a question to Italian. I heard that you guys are EXTREMELY conservative about recipes, that you guys would get angry at any new innovation in recipes. Like, everything has to be done with the traditional recipe to a precision. So it sounds like you guys hate something new in your food.... Question is, didnt at some point, someone in your history invented those. How were those accepted.... shouldnt you guys only be eating, ionno, raw potato, grilled leek, or whatever you can scavenge from the forest??

Carbonara with cream is fine by me. It's not the original recipe, but it's a tasty variant. It's when you get restaurants making a white sauce and stirring some pasta and bacon through it and calling it carbonara that I lose my shit. That's just nasty.
